For the QQEEPROM_2_17.bin – Can you please tell me what Ch5, Ch6, Ch7 & Ch8 are suppose to do?

The QQEEPROM features many models. If you are referring to the QQ190 model, 5, 6, 7 , and 8 are as follows:
5=arm, SA
6=Unused
7=Flight Mode selection, SC
8=Unused
